Clam Chowder

This recipe came from Sara Wuert's family (the Friends).

What a delecious version of Clam Chowder.

Ingredients

Full Batch Half Batch Ingredient
5 strips 3 strips

bacon (cookded and diced)

1 1/2 onion (diced)
4 stalks 2 stalks celery (diced)
2 tsp 1 tsp thyme (dried)
2 tsp 1 tsp garlic (minced)
1 1/2 C 3/4 C whole butter
8 C 4 C chopped clams
6 C 3 C clam juice
4 C 2 C potato (precooked and diced)
2 tsp 1 tsp salt
2 tsp 1 tsp black pepper
6 dashes 3 dashes Tobasco Sauce (optional)
2 Quarts 1 Quart half & half
1 1/2 C 3/4 C

flour

2 T 1 T parsley (Optional)

 

Preparation

  1. Melt butter.
  2. Add onions, garlic, bacon thyme and celery.
  3. Saute until onions are transparent.
  4. Add flour, make a roux (cooked butter flour mix).
  5. Cook 5 minutes.
  6. Add clams and clam juice. Cook at medium heat for 20 to 30 minutes (do not boil).
  7. Add potatoes, cook 10 more minutes.
  8. Add half and half. Heat to 170 degrees (do not boil).
  9. Season with salt and pepper and Tobasco & parsley
